Nordic Chefs Associations har de siste dagene arrangert kongress og Nordiske mesterskap,

  • Nordic Green Chef

  • Nordic Junior Chef

  • Nordic Senior Chef

  • Nordic Waiter

Norges deltager i Nordic Junior Chef Håvard Onsøyen, fra Stock og De Norske Kokkelandslagene ble konkurransens Winner over all 2023! Håvard oppnådde konkurransens høyeste poengsum i alle tre konkurransene.

Det nordiske mesterskapet ble en stor hjemmeseier for Norge, der Norge vant to gull, 1 sølv og en bronse.

Saken vil bli fulgt opp SOME utover kvelden.

Håvard Onsøyen Nordic Junior  Chef –  menu

Starter:

Lightly baked halibut with browned butter

Pan fried langoustine and spring roll pastry tartelett with claw meat

Marinated squash and lemon emulsion Creamy langoustine sauce

Allergies: Gluten(Weat)Fish,Shellfish,egg,milk, mustard 

Main course:

Chicken breast, cabbage and ragu of leg  Pickled red onion with fresh herbs

Cauliflower with Norwegian cream, Creamy pointed cabbage and oyster mushroom

Roasted chicken jus with sherry vinegar

Allergies:   Gluten / Wheat) celery, milk, sulfit 

Dessert

Vahlrona 63% chocolate mousse with hazelnut cake Gluten(wheat), egg, hazelnuts, milk

Creme fraiche and chocolate cream with strawberry gel, Strawberry sorbet with lime

Warm financier with carrot and salted caramel sauce

Allergies:  Gluten(Weat) Egg, Hazelnuts,milk

Starter:

Pasta dumpling filled with lollo salad, baked carrot, with salad of historic tomatoes  and a sauce made of historic tomatoes

Allergies:  celleriac, milk,sulfite, wheat gluten, egg

Main course:

New summer cabbage filled with, and onion and mushroom cream topped with hazelnuts. butter poached white asparagus, sauteed cabbage, breaded potato puree and a sauce of white asparagus,

Allergies:   milk, sulfite, wheat gluten,egg, hazelnuts

Dessert

Chocolate mousse of Valrhona 64 % with a center of strawberry, covered in chocolate velur. rhubarb cake, fresh strawberries, ruhbarb foam, rhubarb fluid gel, ice cream and honey cracker.

Allergies:  milk, wheat gluten, egg
